“Tropicanka” Cake
Lattice layers of choux pastry, a cooked cream with butter, fruit and jelly.
Steps
1. Melt the margarine, add the flour and water and take off the heat. Beat in the eggs one at a time and mix it all quickly.
2. For the cream, pour off some of the milk and stir the flour into it. Put the rest of the milk on the heat with the sugar and, when it boils, gradually pour in the flour mixture.
3. When the cream has cooled, add the butter and whisk.
4. Pipe the pastry in a lattice and bake 2 layers at 180 °C.
5. Spread the layers with cream and put fruit on the top one.
6. Set the cake in a tin and pour jelly over it.
