Chapter II · Soups

Solyanka

A thick meat soup with pickled cucumbers, olives and lemon — a good use for whatever smoked meat is in the fridge.

Steps

  1. 1. Make a broth with any meat.

  2. 2. Cut up the meat from the broth and add all the meat you have: frankfurters, salami, smoked meats. Something smoked is best.

  3. 3. Simmer everything together with potatoes to taste — cut into pieces or mashed.

  4. 4. For the fried vegetables, fry plenty of onion and the carrot until golden, then add diced pickled cucumbers, and at the very end tomato paste or ketchup, so the cucumbers do not go soft. Olive brine can go in too.

  5. 5. Add the fried vegetables to the pot and let it boil for a while. Add herbs and olives at the end.

  6. 6. Put lemon and sour cream straight into each bowl, to taste.
